Wenn du CAS meinst, dann fällt Octave weg, weil es kein CAS ist, sondern für numerische Sachen.

Persönlich mag ich Maxima am liebsten (imaxima als Interface). Die Syntax ist imho recht gut. Leider fehlen jedoch einige Feature oder einige Bereiche sind nicht ganz so gut entwickelt, weshalb ich auch Mathematica regelmäßig benutze. Aber da ist die Syntax grausaum, auch wenn es Featuremäßig ziemlich gut ist.

MuPAD habe ich nie benutzt. Maple hab ich nicht sonderlich intensiv benutzt. Ich finde es ist aber sehr einfach zu benutzen. Aber irgend wie war ich nie wirklich damit zufrieden.

Ich persönlich bevorzuge Maple + Matlab, da Matlab Maple's Algebra-Sachen integrieren kann.

Was freie Software angeht: Maxima und Scilab.
